Well I thought it was time for a bit of a random post about what I’ve been up to today, so here it is.

I’m round at my girlfriend’s house this weekend, we’ve been together since 8th April 2005, I love her with all my heart and we’re still going strong as ever, and do you know the secret? Homemade Curry!

Ok that’s not the reason, but we do like our curries, and it just so happens that today we decided that we would make one, using my mum’s fantastic recipe I might add!

So I guess you may be wondering what the recipe is? (Or maybe not, but i’m going to tell you anyway)

  • 4 Chicken Breasts (Chopped into squares)
  • 1 Jar of Curry Paste (Balti, Masala etc. I prefer Balti)
  • 1 Jar of Tomato Passata
  • 1 Carton of Creamed Coconut
  • 3-4 Cloves of Garlic (Crushed)
  • 1 Chopped Red Onion
  • 4 Chopped Chilis
  • Chili Powder to taste (Optional, depends if your a firehead or not)

As for cooking, I generally just chuck the chicken into a saucepan with some butter and wait until it turns white. Then I bung in the rest of the ingredients in no particular order and give it a good old stir.

Then simply let it cook on a low heat for about an hour. Once thats done, let it stand for a good few hours to enhance the flavour, or if your hungry, just serve it up with some rice and naan bread.
